Homemade Additive-free Village Tomato Paste (Aydın)
It is made in Aydın Nazilli district with fresh vegetables collected in season.
First-class tomatoes determined for tomato paste are separated. It is washed thoroughly on the same day, then it is taken out of the machine and left for a day for the bitter water to pour to the bottom. Then, this accumulated water is drained and kept in chrome copper stainless steel pots under the sun until it thickens. When it starts to thicken, add salt. During the drying process, they are covered with a thin tulle, which we call a mosquito net, to prevent any foreign matter from entering.
There are no additives in the product. Therefore, after the lid is opened, it is necessary to add oil (preferably olive oil) and let it sit to prevent the product from coming into contact with air and molding.
